Peel and cut 2 apples 🍎
Put them in a pan and under slow heat for 30mn to make your own compote. (I usually add a bit of sugar or cinnamon but do not recommend doing that for this recipe).
Once your apples are cooked, add them into your mixer and mix for 1mn.
In a bowl put 20 spoons of flour (I used @bobsredmill gluten free one) , 1 tbsp of baking powder and 1 cup of sugar.
Verse everything into your mixer and mix for a few minutes.
I had to add 4 spoons of flour because the texture was too liquid (it probably depends on the side of your apples).
Prepare a baking sheet. As the cookie mixture is not that compact, I used 2 wooden spoons to make my cookies. Start by making little balls.
Then add 1 tbspoon of chestnut cream (@chestnutcheeks the classic one) in the middle of each cookie.
Add another tbspoon of your cookie mixture on top of the chestnut cream (not too much).
Finish with your toppings: I added dark choc 🍫 & whole organic almonds.
Put in the oven at 180C for 10mn, keeping an eye on them.
By then, your cookies are still quite soft, no worries you just have to get them out of the oven and wait for 30mn for them to soften.
