Homemade chestnut ice-cream

You will need a sorbet or ice-cream maker for this one.

In a saucepan bring 1/2 litter of milk with 30g of sugar to a boil. 
In a bowl beat 4 egg yolks with 30 g of sugar until they turn pale. 
Transfer half of the hot milk into the bowl that contains the egg yolks and beat on high speed for a few seconds.
Transfer to the saucepan and cook over low heat without boiling. Keep mixing slowly with a wooden spatula. 
Allow the mixture to thicken up until it becomes a nice custard sauce. Then remove from the heat and add immediately 20cl of liquid full cream. Keep mixing. 
Add 500g of chestnut cream (it’s delicious with both our chestnut spread “ the classic one” or “the one with orange peels” for a more exotic touch). Mix for 3 minutes. 
Let cool completely before chilling it in the refrigerator for at least 3hours. 
Add the mixture into the sorbet or ice cream maker. 
When it's done, keep in the refrigerator until diner 😊
